
Cast-Iron Skillet Cowboy Beans
2 - 15 oz. cans pinto beans, rinsed and drained
1/2 cup chopped onion
1/2 cup Cookies Original Bar-B-Q Sauce
1/2 cup hot strong coffee
6 slices bacon, crisp-cooked, drained and crumbled
2 T. Worcestershire sauce
1 T. brown sugar
Directions: In a 9-inch cast-iron skillet combine above ingredients.
For a charcoal grill, grill beans in skillet on the rack of an uncovered
grill directly over medium coals about 15 minutes or until bubbly. Grill
for 15 to 20 minutes more or until beans are desired consistency,
stirring occasionally. For a gas grill, preheat grill. Reduce heat to
medium. Place beans in skillet on grill rack over heat. Cover and grill
as above. Makes 6 side-dish servings.
